**Warning** I don’t do measuring cups.
1st fill large pot with water and 1-1/2 bags of dry red beans & season to taste. (Stove med-hi)
2nd In basic non stick skillet brown your preference of sausage (Slice your sausage and I use around 8-10 links- I ♥ sausage) and add to your large pot of beans. (Try not to put sausage grease)
3rd Chop a ½ pack or more of your preference bacon, place in skillet and cook until crispy. Place cooked bacon in your large bean pot; make sure to keep all bacon grease in skillet.
4th Place 3-4 tablespoons of all purpose flour into your bacon grease (stove on med) stir frequently. Add onion, bell pepper, seasoning to flour grease mix (light roux) stir until you get a light paste texture (about 5 or so minutes) then add directly to your large bean pot and stir. This helps thicken your red bean gravy & gives it a great light bacon flavor.
5th Cover beans on med to med-hi for about 3-1/2 to 4 hours stirring occasionally. Make sure you do a tasting before you add any additional seasoning.
6th Cook your preference of white rice.
NOTE: In my experience they are even better when you eat them the next day.
